Sweet Sticky Korean Fried Beef

Ingredients
Beef
- 600g lean beef mince (raw weight)
- 1 tbsp garlic powder
- 1 tbsp onion powder
- Black pepper to taste
- 30ml light soy sauce
- 1 tbsp sesame oil
Sauce
- 20g light butter
- 1 tbsp fresh garlic, minced
- 1 tbsp sriracha
- 70ml light soy sauce
- 20g honey
- 2 spring onions, sliced (for garnish)
To serve
- 200g uncooked rice (yields approximately 630g cooked rice)
Method
- Cook the rice according to package instructions. Set aside.
- In a large bowl, combine the beef mince with garlic powder, onion powder, black pepper, 30ml soy sauce, and sesame oil. Mix well.
- Heat a large frying pan or wok over high heat. Add the seasoned beef and cook for about 10 minutes, breaking it up with a spoon, until browned and sizzling.
- Reduce heat to medium. Add the butter, minced garlic, sriracha, 70ml soy sauce, and honey to the pan with the beef.
- Stir everything together and let simmer for 5-7 minutes, allowing the sauce to reduce and become sticky and glossy.
- The sauce should coat the beef nicely. If too thin, continue cooking for a few more minutes.
- Remove from heat and stir through most of the sliced spring onions, reserving some for garnish.
- Divide the cooked rice equally among 5 meal prep containers (approximately 125g cooked rice per serving).
- Top each portion of rice with an equal amount of the beef mixture.
- Garnish with remaining spring onions.
