Red Cabbage, Apple & Beans
Hearty vegetarian side dish with braised red cabbage, apples, and white beans.

Ingredients
- ¼ head red cabbage, thinly sliced
- 1 red onion, thinly sliced
- 2 green apples, diced
- 1 large sprig of rosemary, finely chopped
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 500ml chicken stock (or vegetable stock)
- 500g cooked white beans (or 2 x 400g tins, drained)
- Salt and pepper to taste
- Fresh dill, for garnish
- Optional: fennel pollen, for garnish
Method

Heat the olive oil in a large, deep pan or Dutch oven over medium heat.

Add the sliced red onion and cook for 3-4 minutes until softened.

Add the thinly sliced red cabbage and chopped rosemary. Stir and cook for 5 minutes.

Add the diced apples and stir to combine.

Pour in the red wine vinegar and chicken stock. Season well with salt and pepper.

Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally, until the cabbage is tender.

Add the white beans and cook for another 5-10 minutes to heat through and allow flavours to meld.

Taste and adjust seasoning if needed.

Serve garnished with fresh dill and fennel pollen if using.

Notes
