Red Cabbage, Apple & Beans

Hearty vegetarian side dish with braised red cabbage, apples, and white beans.

Ingredients

  • ¼ head red cabbage, thinly sliced
  • 1 red onion, thinly sliced
  • 2 green apples, diced
  • 1 large sprig of rosemary, finely chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 500ml chicken stock (or vegetable stock)
  • 500g cooked white beans (or 2 x 400g tins, drained)
  • Salt and pepper to taste
  • Fresh dill, for garnish
  • Optional: fennel pollen, for garnish

Method

  1. Heat the olive oil in a large, deep pan or Dutch oven over medium heat.

  2. Add the sliced red onion and cook for 3-4 minutes until softened.

  3. Add the thinly sliced red cabbage and chopped rosemary. Stir and cook for 5 minutes.

  4. Add the diced apples and stir to combine.

  5. Pour in the red wine vinegar and chicken stock. Season well with salt and pepper.

  6. Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally, until the cabbage is tender.

  7. Add the white beans and cook for another 5-10 minutes to heat through and allow flavours to meld.

  8. Taste and adjust seasoning if needed.

  9. Serve garnished with fresh dill and fennel pollen if using.

Notes
