Ingredients
- 500g pork sausage,Italian style, skinned
- 1 brown onion, finely diced
- 4 garlic cloves, finely chopped
- fresh or dried thyme (optional)
- 1/2 carton sour cream
- 1 chicken or beef stock pot
- 350 g pasta of choice
- 1/3 cup parmesan, freshly grated
- sweetcorn and/or peas (optional)
- Salt and pepper
- water
Method
- Nn a pan on medium heat, crumble the sausage meat into the pan.
- Once the meat is browned off and the fat has rendered, remove
- Add the onion with a good pinch of salt and pepper.
- Once translucent, add the garlic and cook until fragrant & cook
- Add sour cream, spinach, pasta and stock and use enough water to ensure majority of the ingredients are submerged in the liquid.
- Pop the lid on and cook the pasta until al dente.
- Once cooked, stir through a handful of parmesan before serving and enjoy!
