One Pot Creamy Beef Pasta
Rich and comforting pasta with seasoned beef mince in a creamy tomato sauce, all cooked in one pot.

Ingredients
Seasoning Mix
- 1 tsp salt
- 3/4 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp black pepper
- 1/4-1/2 tsp chilli flakes
- 1/4 tsp dried thyme
Pasta
- Olive oil as needed
- 1 medium white onion, finely diced
- 500g minced beef (12% fat)
- 3 cloves garlic, finely diced
- 2 tbsp tomato puree
- 600ml beef stock, warm
- 500g tomato passata
- 180ml double cream at room temperature
- 1 tsp Worcestershire sauce
- 300g uncooked conchiglie pasta (or other short pasta)
- Fresh parsley, finely diced (optional, to serve)
Method
- Mix all seasoning ingredients together in a small bowl. Set aside.
- Add a drizzle of oil to a large pot over medium heat. Fry onion until it begins to soften and turn golden, about 5 minutes.
- Add garlic and fry for 1 minute longer.
- Add beef and break it up with wooden spoon until browned, about 5-7 minutes.
- Stir in the seasoning mix, then add tomato puree and fry for 1 minute.
- Pour in stock, passata (rinse out jar with a splash of water and add that too), cream, and Worcestershire sauce. Stir well.
- Add uncooked pasta and stir to combine.
- Bring to a boil, then reduce heat and simmer until sauce has thickened and pasta is al dente, stirring fairly frequently, about 12-15 minutes.
- If sauce reduces and thickens before pasta is cooked through, add splashes of hot water as needed.
- Check for seasoning and adjust with salt, pepper, and chilli flakes.
- Serve garnished with fresh parsley.

Notes
Conchiglie (shell pasta) works great as it catches the sauce, but any short pasta works well.
The pasta cooks directly in the sauce, absorbing flavour and making it extra creamy.
Leftovers keep well in the fridge for 3 days. Add a splash of water when reheating.
