Oat Cookies

Wholesome oat cookies with optional blueberries or chocolate chips.

Ingredients

  • 113g butter
  • 165g brown sugar
  • 1 egg
  • 3g vanilla extract
  • 140g plain flour
  • 113g rolled oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 100g blueberries, chocolate chips, or other add-ins (optional)

Method

  1. Preheat oven to 180°C. Line baking trays with parchment paper.
  2. In a mixer, beat together butter and brown sugar until smooth and creamy.
  3. Add egg and vanilla and beat for 2 minutes.
  4. Add flour, oats, baking soda, and salt. Mix until just combined.
  5. Fold in blueberries, chocolate chips, or other add-ins if using.
  6. Cover bowl and refrigerate for 20 minutes.
  7. Roll dough into balls and place on prepared baking sheets, spacing them about 5cm apart.
  8. Bake for 10-12 minutes until edges are lightly golden.
  9. Cool on tray for 5 minutes, then transfer to wire rack.

Notes

Chilling the dough helps cookies hold their shape during baking.

Fresh or frozen blueberries work well - don’t thaw frozen berries first.
