Oat Cookies
Wholesome oat cookies with optional blueberries or chocolate chips.

Ingredients
- 113g butter
- 165g brown sugar
- 1 egg
- 3g vanilla extract
- 140g plain flour
- 113g rolled oats
- 1 tsp baking soda
- 1/4 tsp salt
- 100g blueberries, chocolate chips, or other add-ins (optional)
Method
- Preheat oven to 180°C. Line baking trays with parchment paper.
- In a mixer, beat together butter and brown sugar until smooth and creamy.
- Add egg and vanilla and beat for 2 minutes.
- Add flour, oats, baking soda, and salt. Mix until just combined.
- Fold in blueberries, chocolate chips, or other add-ins if using.
- Cover bowl and refrigerate for 20 minutes.
- Roll dough into balls and place on prepared baking sheets, spacing them about 5cm apart.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool on tray for 5 minutes, then transfer to wire rack.

Notes
Chilling the dough helps cookies hold their shape during baking.
Fresh or frozen blueberries work well - don’t thaw frozen berries first.
Store in an airtight container for up to 5 days.
