Creamy Garlic Parmesan Chicken Meatballs

Juicy chicken meatballs packed with vegetables, baked until golden, then simmered in a rich creamy garlic parmesan sauce.

Ingredients

Meatballs

  • 500g chicken breast mince
  • 1 egg
  • 1 carrot, grated
  • 1 zucchini, grated (excess water squeezed out)
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 15g (¼ cup) fresh parsley, chopped
  • 1 tsp smoked paprika
  • 1.5 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • olive oil spray

Sauce

  • 1 brown onion, finely diced
  • 6 cloves garlic, minced
  • 80ml (⅓ cup) white wine
  • 2 tbsp light butter
  • 2.5 tbsp plain flour
  • 625ml (2.5 cups) whole milk
  • 1 chicken stock pot
  • 50g (½ cup) parmesan, finely grated
  • 20g (⅓ cup) fresh chives, finely chopped
  • 20g (⅓ cup) fresh parsley, finely chopped
  • 1–2 tbsp lemon juice
  • 1 tsp smoked paprika
  • 1.5 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper

Method

Meatballs

  1. Preheat oven to 200°C. Squeeze as much excess water as possible from the grated zucchini.
  2. Combine all meatball ingredients in a large bowl and mix well (hands work best). Roll into balls slightly larger than golf balls and place on a lined baking tray. Spray lightly with olive oil.
  3. Bake for 20 minutes until golden and cooked through.

Sauce

  1. Sauté onion with a pinch of salt in a large pan over medium heat for 4–5 minutes until soft and golden. Add garlic, smoked paprika, and oregano; cook for 1–2 minutes until fragrant.
  2. Deglaze with white wine and simmer until mostly evaporated.
  3. Add butter and melt. Sprinkle over flour and stir constantly for 1–2 minutes until a thick paste forms.
  4. Pour in the milk gradually, whisking continuously to avoid lumps. Add the stock pot and simmer gently for 3–4 minutes until thickened and creamy. (Simmer longer if sauce is too thin.)
  5. Stir in parmesan, chives, and parsley.

Finish

  1. Add the baked meatballs to the sauce and simmer for 1 minute. Finish with lemon juice. Taste and adjust seasoning.
