Char Sui Pork

Oven-roasted pork shoulder steaks marinated in a sweet and savory Chinese barbecue sauce.

Ingredients

  • 4 pork shoulder steaks (about 800g), cut 2.5cm thick
  • 60ml (¼ cup) hoisin sauce
  • 60ml (¼ cup) honey
  • 2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp brown sugar
  • 1 tbsp five spice powder
  • 1 tsp MSG (optional)
  • Red food colouring (optional)

Method

  1. Cut pork shoulder into 2.5cm (1 inch) thick steaks if not pre-cut.
  2. Pierce all over with a fork.
  3. Combine hoisin sauce, honey, dark soy sauce, oyster sauce, brown sugar, five spice, MSG, and food colouring (if using) to make the marinade.
  4. Coat the pork in the marinade and leave for at least 1 hour, or overnight for best results.
  5. Preheat oven to 220°C. Place pork on a rack over a baking tray.
  6. Roast for 30 minutes, regularly flipping and basting with the remaining marinade.
  7. Serve over steamed rice.
