Banana & Blueberry Muffins
Healthy oat-based muffins with banana and blueberries, naturally sweetened with honey.

Ingredients
- 2 ripe bananas
- 80g honey
- 200g Greek yoghurt
- 1 tsp vanilla extract
- 2 eggs
- 200g blended oats (oat flour)
- 1 tsp baking powder
- 1 tsp salt
- 150g blueberries (fresh or frozen)
Method

Preheat the oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners or grease well.

Mash the bananas in a large bowl until smooth.

Add the honey, Greek yoghurt, vanilla extract, and eggs to the mashed bananas. Whisk until well combined.

In a separate bowl, mix together the blended oats, baking powder, and salt.

Add the dry ingredients to the wet ingredients and fold together until just combined. Do not overmix.

Gently fold through the blueberries.

Divide the batter evenly among the muffin cups, filling each about three-quarters full.

Bake for 20 minutes or until golden and a skewer inserted into the centre comes out clean.

Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes
Blended oats can be made by processing regular oats in a food processor until they reach a flour-like consistency. These muffins are naturally gluten-free if using certified gluten-free oats. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
